I feel like I struck gold when I got married. I literally couldn’t love my husband any more then I do. He is the perfect man for me; he is driven, hard working, sweet, honest, fun and smoking hot. He is the best dad I could ever have even hoped for my son. He is my balance, the Yin to my Yang ;) and he is so patient and loving and truly is my perfect match.
Everyone has their struggles in life, the things that they would change given the chance, and I have to honestly say, that after 10 whole years together, I wouldn’t change a thing about him or our relationship. Our struggles, unfortunately, have been different then what I imagine most couples going through. They havent been the run of the mill issues, and have been a deeper type and things that most people take for granted we are reminded daily that we are lucky to have each other. I have to say I am proud that we are so in love and so good together; and I am happy that we remember to show each other how important we are to each other. We dont take each other for granted, and I am seemingly constantly reminded how fleeting life can be and how truly important health and love is.
tonight I was reminded of how lucky I am to have landed him, again. He’s a hunter, and he made an amazing salad with fresh duck that he shot over the weekend. this particular duck I was irritated over because it was taking up highly prized real estate in our holiday refrigerator. It was just put there in whole, in a grocery bag, without warning (and i accidentally touched with my bare hand- disgusting!)
He broke it down on the tailgate of his tuck last night while I was playing outside with our son last night. Something I NEVER IN A MILLION YEARS would have thought was in the least bit attractive before. It was freezing out and honestly, it was kind of sexy. Its nice to have a man who is totally capable of everything he is tested with and somehow shines through it all.
This salad was amazing, we cooked in tandem, each contributing part of the dish, and it somehow worked out perfectly.
it was 2-3 ducks broken down & marinated in OJ overnight. seared in a cast iron skillet and topped with a reduction of honey, lemon juice and soy
placed on a salad of field greens, purple grapes, smoked gouda, mandarin oranges and sliced almonds
topped with a dressing of 1 part sesame oil & 2 parts rice vinegar
We fried some fresh tortilla strips and topped the salad with those as well as sesame seeds
seriously, amazing, and fresh duck is delicious. If you have the chance to eat it, marinating in OJ takes all of the gamey out and almost tastes like filet. I surprise myself with the foods that I eat sometimes now, and this is one of them. I can actually say that duck is as good as a filet. Or maybe its seriously just that much better when your amazing hubby makes it for you :)
