What a good idea- found it on pinterest. Take yogurt, fill into a ziplock and cut a corner off the bag. Pipe dots on a cookie sheet and freeze. I used full fat strawberry and vanilla yogurt. Yum!

so the name of the recipe, (found on http://divabikinileslie.tumblr.com/post/19172748581/clean-vanilla-coconut-bliss-balls) is really Clean Vanilla Coconut Bliss Balls. My husband, being the charmer he is, says “haha, I’ll give you some vanilla bilss balls” I guess some guys never grow up ![]()
anyway, these are pretty good. They need some spices, but I followed the directions exactly and added all-spice as an after thought. Next time I’ll add some vanilla along with the water and cinnamon & nutmeg to the mix.
Clean Vanilla Coconut Bliss Balls
Combine
140g oat flour (1 1/3cup)
5 scoops of vanilla protein powder
36g walnuts, finely chopped (or any chopped nut)
in a medium bowl. Stir it around until well blended.
Add
3/4 cup crunchy peanut butter (12 tbs)
4 tbs honey
and use your fingers to mush the nut butter and honey through the dry ingredients until it’s all combined into into a mealy, crumbly batter, like pie dough.
Add 1/2 plus 2 tbs water, starting with 1/2 cup and then adding water by tablespoons (I suggest adding a tsp of vanilla and cinnamon & nutmeg)
mushing it together with your hands until it forms a big, stiff yet sticky ball.
Makes 20 35g protein balls.
If you want to be precise, measure each ball out on your food scale at 35g and then roll it between your palms like playdough to make a round ball.
Pour
23g shredded unsweetened coconut
into a plate, and roll each 35g ball into it until the ball is coated with coconut.
Store in airtight container in the fridge. Enjoy!

this recipe was straight out of my Bon Appetite magazine- except I used 8 eggs instead of 12, so had lots of filling. YUM!
mix in
Chop bacon add most to the yolk mixture, keeping some for garnish. put into zip lock bag, cut the corner off and pipe into yolks. top with bacon and eat.
AMAZING!!! (I had these and strawberries for lunch and it was perfect and satisfying)

This has been my favorite protein shake lately Vanilla protein Milk Canned pumpkin Pumpkin pie spice Water (because it’s so thick) Tastes like pumpkin pie, which I guess is kind of seasonal, but i think it’s too good not to eat all the time!
This might have taken it too far: Chicken egg rolls from cheesecake factory (leftovers from my friends lunch, yes, I take home other peoples food) I took all the filing out and put over lettuce. Added avocado, salsa and ranch. I also cut up 1/2 of the egg roll wrapper and added it in for crunch. It was really good!

Dessert. Greek plain yogurt, blueberries honey and pecans. Not mine- I made this for Nick and I ate 2 fruit roll ups and a tootsie roll. Picture of health.
Pre WOD breakfast I was not hungry at all but I can’t workout on an empty stomach I was iffy about this combo but it worked well! 2 tbl oats 1 scoop vanilla protein Frozen strawberries 1 cup milk 1 scoop peanut butter
MidMorning snack: peanuts, almonds, cheese and blueberries
Deviled Eggs:
Its much better for me if I have healthy snacks prepared and ready to go in the fridge. I work from home, so it can be bad if I’m not prepared- I just graze all day so at least if I am prepped its usually healthy. I made Deviled Eggs in the spirit of spring :)
8 hard bolied eggs, split and yolks placed in bowl
3/4 plain greek yogurt (I really do use this stuff a ton!)
2 tbl pickle relish
1 tbl dijon mustard
salt & pepper
mix yolks with the rest of the ingredients and fill the hollowed out eggs with it. it makes more then you need, so just overfill the eggs
FRUIT SAUCE- this is a staple!
this is the best stuff ever. I made it the first time for the Crossfit Comp and layered it with Plain Greek Yogurt (low sugar fruit on the bottom yogurt) for a snack during the day. My husband ate 3 bowls of it which is crazy since I brought other things like Lara Bars, Venison Jerky, apples etc.
since then we’ve been making it weekly, and working to perfect the recipe. (he’s even made some batches on his own, and he NEVER cooks)
this is the best so far:
1 bag each frozen raspberries, strawberries & blueberries (frozen was good this winter since nothing was in season)
3 tbl butter
3/4 cup OJ
3 TBL Brown Sugar
1 tbl cinnamon
few dashes of nutmeg
melt the butter, and add the frozen fruit. when that has cooked down (about 10minutes) add the remaining ingredients. bring to a boil. then, let it reduce for a while, I’d say almost an hour over low heat. Add 1 teaspoon cornstarch to thicken if its not thick enough and store in the fridge!
We use it on everything from cottage cheese, ice cream, plain yogurt, cottage cheese pancakes, you can really put it on anything protien to make a complete meal since it has both good carbs and fat.
